THE BEST BREAD PUDDING EVER!

For me, this has got to be the BEST bread pudding recipe which is quick and easy to make and resembles the old-fashioned recipe we all love! However, this one is made with 5 simple easily available ingredients and is a simple comforting bread pudding. It’s the basic kind of comforting dessert and perfect for this cold chilly weather here in the UK.

HOW TO SERVE THIS PUDDING?

This pudding can be served cold by itself or hot with a nice scoop of luscious vanilla ice-cream or any other ice-cream of your choice. It also tastes amazing with a plain vanilla custard unapologetically drizzled on top of the bread pudding.

TASTES LIKE BEBINCA

Let’s go back to my humble 5 ingredient simple bread pudding. This recipe tastes so much like bebinca (A traditional Goan layered sweet made with coconut milk, eggs and sugar and generally flavoured with nutmeg). But, this recipe of mine doesn’t have coconut milk added. However, just incase you are lactose intolerant then feel free to substitute the whole milk in this recipe with any other plant based milk of your choice like coconut milk, almond milk, soy milk, oat milk, etc.

This isn’t your regular pudding but it is the type with crispy outside edges, with a soft middle and a custard like texture. JUST PERFECTLY AMAZING!

5 INGREDIENTS IS ALL YOU NEED

These bread puddings are best made with stale bread or leftover bread. For this recipe I used some sliced bread but you can use any bread you fancy.

This recipe uses old stale bread or any leftover bread, a creamy batter or custard made of eggs, sugar, milk and some flavouring -whatever spice you’d like, for example~cinnamon powder, nutmeg powder, cardamom powder, etc. All this has to be mixed and baked until the top and sides turns slightly crisp.

Normally, the traditional recipe calls for raisins but I omitted them altogether cos I couldn’t be bothered to run to the grocery in this bloody cold weather just for some raisins.

That reminds me that I’ve still got some fruits soaked in rum from October 2019 which I’d soaked to bake a rich fruit cake which is long overdue but I don’t see myself baking it until I come back from my trip to Goa which is coming soon…End of next week and I’ll be in Goa! 😁 So until then the fruits can get richer bathing in rum…

So according to me keeping this recipe to just 5 basic ingredients makes it the best bread pudding ever. This recipe can easily be made with regular ingredients most of us normally have lying around in our pantry. This is the perfect kind of quick dessert for all those busy week day evenings after a tiring day at work. It’s definitely going to be a hit amongst kids too. You can save some for later to pack as a part of their school lunch. I assure you of an empty lunch box.

MAKE IT IN ADVANCE

This bread pudding can be made in advance and freezed for a couple of months. It’s best made ahead of time and then just served or eaten whenever your craving some last minute dessert.

5-ingredient Bread Pudding

Ingredients
  

  • 8-10 slices White Bread
  • ½ cup Granulated sugar or as per preference
  • 6 nos Eggs
  • pint Milk
  • 1 tbsp Nutmeg Powder
  • 1 tbsp Butter use to butter the tin

Instructions
 

  • Preheat the oven to 180°C.
  • Start with buttering a 12×8 tin.
  • Next roughly break the bread into small pieces and evenly spread it all over the tray. Add more or less slices as per preference.
  • In a large bowl break all the eggs, add the sugar and whisk well.
  • Later add the milk and nutmeg powder.
  • Whisk well until all the sugar dissolves.
  • Pour the custard mixture over the bread and let the bread soak in the custard completely.
  • Bake for 40-45mins or until the sides or top crisp up.

Notes

  • You can substitute the white sugar with brown sugar or molasses or even some cane sugar.
  • The whole milk can also be substituted with any plant based milk.
  • The measures of the ingredients can be altered as per preference. 
  • You can also flavour the pudding with vanilla essence, nutmeg powder, cinnamon powder, cardamom powder, etc.
