How to make perfect rice kheer with fewer ingredients…

I’ve always got some leftover rice from the previous day and sometimes I end up cooking something else and the rice just remains in the fridge…

This creamy rice kheer is very easy to make with leftover rice and to be frank, I’ve just made use of six ingredients to cook up this storm…

It is the perfect recipe for all those who’ve got a sweet tooth…

A tip to cooking it in just 15mins is to pressure cook the rice for 8-10mins with some cashews..

There’s no fixed measure as it would all depend on the amount of rice you’ve got…

I’ve used cashews for this recipe because I had some from Goa but you can substitute it with any dry fruits or nuts…

Once the rice is pressure cooked for a whistle or two, mash it all with a masher for a right thick consistency…

Put it back on a medium flame and add sugar as sweet as you want it to be… mix in some cardamom powder for flavour and hot milk to get it to the right consistency. I’ve also added two tablespoons of flaxseeds just for that extra nutritive element…

So, for those looking out for a healthy alternative, substitute milk with almond milk or coconut milk and sugar with cane sugar.

I would categorise this recipe as experimental cooking as that’s what I did with it and it turned out to be amazing…
