One Pot Veggie Spaghetti by Nadia Azavedo

Hello! We are taking a little detour today, from Vania’s kitchen in the UK to my kitchen in Goa. I’m Nadia, the guest blogger. Sorry for the disappointment if you came looking for Vania, but I’m quite positive and certain about this recipe being a hit amongst you guys…😁

Most of us are generally very busy during the week and return home from work exhausted and tired, hoping for dinner to cook itself. That sounds like a long shot, but I kid you not, this recipe does just that.

One pot pastas are so quick and easy to make and I’m sure no one can resist serving it just once. It’s a comforting meal. It’s a wholesome meal. Maybe you can just go and make it now or maybe for your next date night in.

Anyway, let’s get straight into the recipe then, shall we?

Serves 2

RECIPE~

INGREDIENTS:

  • 220gms spaghetti
  • 220gms cherry tomatoes, cut into halves
  • 1/4 cup sweet corn
  • 1/4 cup of green peas
  • Salt and pepper, to taste
  • 1 tsp Pasta seasoning (I used a ready blend of garlic, salt, basil, black pepper, onion flakes, oregano, chilli flakes)
  • 1 tablespoon oil, preferably olive oil
  • 2 1/4 cups of water

Note: Use a wide flat pot, which will allow the water to evaporate quickly

METHOD:

Add all the ingredients to the pot.

Bring it to a boil on a high flame.

Let it cook for about 8 to 9 minutes, till the pasta is al dente.

Serve with grated cheese and some more pasta seasoning.

Feel free to make this recipe your own. Use vegetable or chicken stock instead of water, maybe throw in a few sausages, or even some cooked shredded chicken once the pasta cooks.

The possibilities are endless!
