For this recipe, it’s best when the rice is cooked but dry. So, leftover rice could certainly be the best pick…
For people like me who love eating rice, we’ve always got some leftover rice from lunch or dinner. Besides making a nice rice pudding with it, I normally unquestionably make a fried rice because it’s very quick and easy to make and EAT!😋
Fry all the ingredients in a wok and you’re good to go…🤩
This recipe can be tweaked and made a wholesome vegetarian one by just omitting the lardons.
Lardons are flavourful chunks of bacon 🥓 fat trimmings and meat.. Quite a great relish to be slipped into fried rice or fried noodle recipes…
So, you can throw in some other veggies too in this recipe whichever is more convenient and conventional for you to use. Also, get all out and crazy with your choice of rice- you can add brown rice or white rice or any other rice as per preference and what suits your tastebuds…
The part I loved best, while cooking this wholesome meal was the crackling sound the rice made while frying.😍
You can add as many fragrant spices as you please…
Let’s have a look at the recipe now…
- 4 cups cooked leftover rice.
- 200gms of smoked lardons
- 2 sprigs of spring onion, finely chopped
- 3 tbsp of melted unsalted butter
- 1 maggi cube or chicken stock cube for extra flavour
- Freshly crushed pepper to taste
- 1/2 tsp garam masala powder
- 1 tbsp Chinese five spice powder
- 1 tbsp of White Vinegar
- 1 tbsp of soy sauce
- 1/2 a small cabbage, finely chopped
- 2 green chillies, finely chopped
- 2 eggs, well beaten and seasoned
In a large wok, add the butter and lardons and fry until the fat melts.
Add the chillies and onions, and sauté for 2 mins. Then add the cabbage and fry it until it turns translucent.
Add the rice and toss well.
Season with freshly crushed pepper, both the spice powders and toss well…
In a bowl, mix together the vinegar, chicken stock cube and soy sauce…throw it in…
Toss the rice well for another min or two on a high flame…
Lastly, add in the eggs for that extra protein to incorporate into the dish.

That is a beautiful stir fried rice. The whole point of this is hopefully you or anyone you know, based on the principles, could make this your own recipe. Throw in your own ingredients- veggies, meats, nuts (for all you care), herbs, sauces, whatever you like- and you’ve got an amazingly yummy tummy-filling fried rice recipe.
