Escape into a seafood paradise and turn your heads to learn this quick and hassle-free stir-fry recipe
The other day we popped into the supermarket to get some bread but the Goan in me had to check out what seafood was available. I found some cold water boiled prawns-reduced…such an amazing bargain…thought to myself…oh! how much I miss being back home after my 3 month holiday in Goa, far away from England.
And so, I brought back the prawns home with me… so proud of the Goan in me..😁
Marinated them for a while until all the spices were well infused.
Fried them with some onions.
Enjoyed it with some hot rice and chicken curry.👌🏼😋
Nothing beats having a hot meal when the weather outside is so wet and gloomy.
Note: If you’re not a lover of prawns, you can substitute it with any other fish or meat or poultry of your choice or maybe even soya for vegetarians.
I cooked it just enough for the two of us so that’s how I measured the ingredients, but one can adjust the quantities as per ones preference..Also, I’m no expert on making the perfect Goan prawn chilly fry but this is how I made it that day, we loved it and I had to share the recipe with all you guys…
I marinated the prawns with some salt, a spoonful of my famous recheado paste, some freshly crushed peppercorns and turmeric…kept it covered for an hour so that it gets well marinated…and went ahead and prep-ed the rest of the mise-en-place…
For the amount of prawns I had which would be around 200-300gms I took 4-5 cloves of garlic- crushed them well to make a thick paste, 3 small sized onions-sliced, one tomato- roughly chopped, 4 small green chillies – slit lengthwise (this could be adjusted as per ones preference as it might be too hot for some or too less for others).
One tablespoon oil, 5 tablespoons of water and some freshly chopped coriander leaves.
Kitchen tip from my mum-in-law: If you do not want fresh coriander to get spoilt once brought from the market, just clean it well by removing the stem and store it in a dry air tight container in the fridge. It remains fresh for quite some time.
In a thick bottom frying pan, fry the garlic without letting it burn and then add all the veggies together except for the coriander leaves.
Once the rawness of the onions disappears and they turn slightly translucent then add the prawns, fry it for sometime until done and add a little water and simmer on a low flame for a few minutes.
Once done, garnish it with the greens and serve hot.
