The perfect morning breakfast…

Whether it is our mums or dads making one for us or the house helper, omelettes have been and will always continue being a part of that perfect morning breakfast for many of us around the world…

As far as my memories about my childhood go- we normally had an omelette for Sunday brunch when our stomachs would be able to adjust to a heavy brekkie…Other days specially during school days we were always on the go… 🏃‍♀️ running to use the washroom, running to get ready, running to enjoy that hot cup of flavoured milk🥛 , running to get on the school bus 🚌 , running to enter the school on time when we missed the bus and Pai had to drive us to school… a lot of fun memories and a huge amount of running..

I’m sure my parents miss that time even more than us, as my youngest sister is already in the tenth standard this year, and as it is, her school is just a kilometre away from home unlike ours which was in Panjim… almost 15-16kms away…

Our omelettes at home were generally standard: 2 eggs, onion, tomato, green chilli -just one or half, a clove of garlic finely minced, turmeric powder, salt to taste and finely chopped freshly coriander leaves…the egg was very well beaten… this gave a very fluffy omelette…

I recall a tip from my grand aunt who we fondly called ‘tia’…

Food tip #1: With your ^washed bare hands,mix the onions and tomatoes with some salt to let out the juices flow… this makes the omelette even tastier…

Tia is no longer with us… God bless her soul!

Moving on: we as a couple, Nigel and I love cheese… different types, tastes, forms and the list only grows… and so we end up trying out a variety whenever we get a chance…

Nigel fell in love with cheese during his childhood, when he’s dad used to get for them on his yearly visits to Goa, Kraft cheese from the gulf… So, the other day when we went to pick up groceries- which now has also become our post Sunday mass ritual-we picked up this Kraft Cheddar Cheese Spread… it was one of those cheeses we regret buying… we didn’t like it much as a spread so decided to incorporate it with whatever foods possible just to finish the bottle… cheese should never be wasted…

Two different situations-and I thought of making this perfect omelette recipe this morning for breakfast, taking onion and tomatoes for my childhood and cheese from Nigel’s…

So what would you need for this recipe:

  • 2 eggs
  • 1 sprig of scallions or spring onion, finely chopped
  • 1/2 tomato, finely chopped or you can substitute it with 2-3 cherry tomatoes finely chopped
  • 1 tbsp Kraft cheddar cheese spread
  • Freshly crushed pepper
  • Salt to taste
  • 1 tbsp of any vegetable oil-nothing super fragrant

Method: Heat oil in a frying pan.. mix all the ingredients together and whisk well until frothy…

Add the mixture to the pan, cover the top with a lid and cook on a low flame until done… flip it over and cook until done..

Serve hot with some lightly buttered toast and a hot cup of masala chai…
